Keto Pecan Pie Recipe
Ingredients:
For the crust:
1 1/2 cups almond flour
1/4 cup coconut flour
1/4 cup butter (melted)
2 tbsp erythritol (or your favorite keto sweetener)
1/4 tsp salt
1/2 tsp vanilla extract
For the filling:
1 1/2 cups pecan halves
3/4 cup keto-friendly maple syrup (or sugar-free maple syrup)
3/4 cup butter (melted)
3 large eggs
1 tsp vanilla extract
1/2 tsp ground cinnamon
Pinch of salt
Instructions:
1. Make the Crust:
Preheat your oven to 350°F (175°C).
In a bowl, combine almond flour, coconut flour, melted butter, erythritol, salt, and vanilla extract. Stir until it forms a dough.
Press the dough evenly into the bottom of a 9-inch pie dish, making sure to cover the sides as well.
Bake the crust for about 10-12 minutes, or until golden. Once done, remove from the oven and set it aside to cool.
2. Make the Filling:
In a medium saucepan, melt the butter and keto maple syrup over low heat, stirring occasionally.
Once the butter is fully melted, remove from the heat and whisk in the eggs, vanilla extract, cinnamon, and a pinch of salt. Mix until smooth.
Stir in the pecan halves to coat them in the syrupy mixture.
3. Assemble the Pie:
Pour the pecan filling into the prepared crust, spreading the pecans evenly across the top.
Bake for about 30-35 minutes, or until the filling is set and slightly firm to the touch. The edges of the pie should be golden brown.
Once baked, remove from the oven and allow the pie to cool completely before slicing.
4. Serve & Enjoy:
Once the pie has cooled, slice and serve! For an extra touch, serve with a dollop of whipped cream or a scoop of sugar-free vanilla ice cream.
